Raw “Samoas” (the Girl Scout cookie)

Please help me annihilate my competition by buying a box of Thin Mints.

I was a Girl Scout when I was a little girl.

I remember the cookie sales. It was a stressful time.

I felt this odd edge of competition – I HAD to sell, sell, sell. I wanted to blow the numbers out of the water. My scout leaders pumped our little good-natured hearts full of adrenaline. Think of the benefits these sales would bring our troop – more trips, more activities, and best of all, more badges for my cute little green vest.

Our troop dissolved after a surprisingly short time. Either we didn’t sell enough cookies, or our troop was just unruly. However, Girl Scout cookies still bring a bit of joy to my soul, so I was more than pleased to discover this recipe for raw “Samoas”, the coconutty, caramel treat:

1 c almond meal

1/4 c coconut flakes

2 Tbsp Maple Syrup

2 Medjool Dates

1 Tsp Vanilla

Throw all of these ingredients into your Blendtec and blend until smooth. Create small, golf-ball sized spheres and drop onto your Excalibur Teflex sheets. I would recommend dehydrating these puppies at 110 degrees for about 4 – 6 hours.

You can add a ‘topping’, if you’d like:

12 soaked Medjool dates

2 Tbsp Maple Syrup

2 Tbsp Sunflower Seed Butter/Almond Butter

1 Tbsp Vanilla

1/8th cup (splash) of the date soaking water

Drop all of the ingredients into your Blendtec and add 1/2 cup of coconut flakes. Blend until smooth, and empty the mix into a bowl. Add another 1/2 cup of coconut flakes and fold by hand.

Spoon the ‘topping’ onto the raw “Samoas”. Hide the finished product from your children and significant other. Eat and make lots of ‘yummy’ noises with your mouth.
